What you need:
- 270g Soba-Noodles
- 2 carrots (julienned)
- 200g kale
- 200 g Edamame
- 3 spring onions
For the Ginger-Miso-Sauce
- 2.5cm ginger (minced)
- 2 1/2 teaspoons Miso
- 1 pcs garlic (minced)
- 3 teaspoons soy sauce
- 2 teaspoons maple syrup
- 2 limes
- 2 teaspoons Sriracha
- 2 teaspoons sesame oil
- 2 teaspoons sesame seeds
- Prepare noodles according to instructions on the label
- Add edamame to boiling water and let simmer for 5 minutes
- For the ginger-miso-sauce, thoroughly mix all ingredients
- Add noodles,kale, carrots, edamame, spring onions, and sauce to a hot pan, mix and fry until kale starts to wilt
